Apple pancake from the oven
Quantity Ingredient
20 g Butter
2 Apple
1 tbsp Sugar
30 g Almond splinters
5 Eggs
180 g Wheat Flour Type 405
1 pinch Back Powder
0,25 l Milk
150 g Cream Fraiche
2 tbsp Acacia Honey
1 tsp Ground cinnamon

Apple pancake from the oven rises strongly. You need a coated pan with a diameter of at least 28 cm and a slightly higher rim. The pan should have an ovenproof handle. Preheat baking oven to 200° C or convection oven to 180° C. Put the butter in the pan. Briefly place in the oven until it has melted. Peel the apples and cut them into slices. Cover the bottom of the pan with apple slices. Sprinkle with sugar, cinnamon and almond splinters. Place in the oven for 10 minutes. For the pancake, whisk the eggs until foamy. Mix the flour with a pinch of baking powder and a pinch of salt. Stir in little by little. Stir in the milk. Pour over the apples. Push the pan on the 2nd rail from below into the oven. Bake for 20 minutes until the dough is firm. Turn the apple pancake onto a cake platter. Place the cake plate with the apple pancake once more on the 2nd splint from above. Switch on grill to level 3. Grill for 2 to 3 minutes until crispy. Mix cream fraiche with honey. Season with cinnamon. Spread the cream fraiche on the apple pancake.
