Aubergine puree

Aubergine puree is an oriental starter. Peel and dice the aubergines. Heat the oil in a pan, fry the eggplant cubes until soft and season with salt, cayenne pepper and pressed garlic. Let the aubergines cool, pour into a mixing bowl and puree with lemon juice. Stir the Tahina Sesame Paste into the aubergine puree. Cut the parsley into fine strips and mix into the aubergine puree. Pour aubergine puree into small bowls, sprinkle with pine nuts and decorate with olives and parsley.
