Beef goulash with chanterelles

For beef goulash with chanterelles first heat butter lard in a casserole. Dice the streaky bacon and fry. Add the beef goulash in portions. Sear vigorously. Dice onions and add. Add frozen chanterelles to goulash. Braise the chanterelles briefly. Season with pepper, salt and herbs de Provence. Deglaze with red wine. Set the temperature to medium. Put the lid on. Braise beef goulash with chanterelles for 90 minutes. Pour in beef broth little by little. Mix starch flour with some cold water. Bind the sauce with it. Stir the cranberry jelly into the sauce. Finely chop the parsley. Sprinkle over the beef goulash with chanterelles.
