Green cabbage with fried potatoes

Green cabbage wash, pluck small and pour over with boiling water. Dice an onion, pour into a large saucepan and pour the meat stock over it. Add the green cabbage, cover with a lid and cook for 5 minutes. Switch temperature to medium level. Mix coarse oat flakes with the green cabbage and place Bregenwurst on top. Let green cabbage stew for 30 minutes. Cut the Kassler salmon meat into slices and place on the green cabbage 10 minutes before the end of the cooking time. After 5 minutes turn Kassler once. For the fried potatoes peel cooked and cooled Pell potatoes and cut into slices. Cut the streaky bacon and an onion into cubes. Heat the clarified butter in a pan. Fry the bacon cubes and onions, remove from the pan with a skimmer and put aside. Fry the potatoes in the pan and fry until golden brown. Add the onions and bacon cubes and season with salt and pepper. Remove the meat and Bregenwurst from the pot and season the green cabbage with a little salt. Serve green cabbage with fried potatoes, Bregenwurst and Kassler.
