Bacon potato salad
Quantity Ingredient
500 g Boiling Potatoes
1 Onions
0,125 l Broth
2 tbsp White wine vinegar
1 tsp Sugar
Pepper & Salt
100 g Streaky bacon
20 g Butter
0,5 tbsp Parsley

Bacon potato salad is served lukewarm. Boil firm boiling potatoes with skin. Drain and briefly rinse with cold water. Peel, cut into slices and put into a bowl. Dice onion and place in a saucepan. Add broth, white wine vinegar and sugar. Boil broth for 5 minutes. Pour hot over the potato salad. Season with salt and pepper. Dice streaky bacon. Fry in butter until crispy. Mix the bacon with the potato salad. Let the bacon and potato salad stand for 30 minutes. Finely chop the parsley. Sprinkle over the bacon and potato salad.
