Australian cheese cake is prepared unlike German cheese cake not with curd cheese, but with fresh cheese. Well chilled Australian cheese cake is also often served as a dessert cake. For the bottom, first put butter in a pot or butter pan and melt at a low temperature. Remove the butter from the heat and let it cool slightly. Preheat oven to 180°. Butter biscuits can either be finely ground with the grating attachment of the food processor, or finely chopped in a mixer. Put the biscuit crumbs in a bowl and knead with the cooled butter and 2 tablespoons sugar. Lightly grease a 24 springform pan, spread the biscuit mixture evenly in it and form an edge that reaches about halfway up the ring. Press the biscuit mixture firmly down and bake in the preheated oven at 180° for approx. 10 minutes on the middle shelf. Meanwhile, prepare the filling. Put the fresh cheese in a mixing bowl and mix with 100 g sugar. Separate the eggs in two bowls. Stir the egg yolks into the fresh cheese and store the egg whites. Stir the grated lemon zest of an untreated lemon and the lemon juice into the fresh cheese. Season with a few drops of butter vanilla aroma. Stir two heaped tablespoons of flour and cream fraiche into the cheese mixture. If you want to decorate the Australian cheese cake before serving it, as you can see in the picture above, you can first cut three slices of the passion fruit with a very sharp knife and put them aside. Otherwise halve the passion fruit, scrape out the seeds with a teaspoon and mix into the cheese mixture. Beat the egg whites in a fat-free bowl until stiff and carefully fold into the cheese mixture. Remove the pre-baked cake base with oven cloth from the oven. Reduce oven temperature to 150°. Cheese mass in the cakes bottom fill. Australian cheese cake is baked on the middle rail for about 45 minutes and should then cool about 1 hour in the turned off oven. Take the cake out of the oven and let it cool down so that you can put it in the fridge. Carefully remove the cheese cake from the springform pan with a knife and cool well in the fridge until serving. Australian cheese cake can be decorated with slices of passion fruit and lemon balm before serving.
