320 g Wheat Flour Type 405

230 g Butter Lard
5 tbsp Ice Water
650 g Apple
100 g Sugar
5 tbsp Cognac
10 g Butter

This Apple Pie Apple Cake recipe I got from America. If you don't have a pie pan (22 cm diameter), you can also bake the Apple Pie Apple Cake in a quiche pan or springform pan. Put the flour in a mixing bowl and mix with 1/2 to 3/4 teaspoon salt. Spread the cold clarified butter in flakes on the flour. Work the clarified butter under the flour using a fork or 2 knives until small crumbs are formed. Do not knead the dough with your hands so that it becomes light and leafy during baking, otherwise it will become too warm. Fill a bowl with ice cubes and cold water. Remove 5 tablespoons of ice water and add to the dough. Work the ice water with a fork under the dough. Use any remaining ice water to cool your hands. Then shape the dough with your hands as quickly as possible into two balls of the same size. Wrap the dough balls individually in cling film and press flat. Place the dough in the fridge for about 30 minutes. In the meantime, peel and core the apples, cut into small cubes and weigh 650 g of them. Heat 50 g butter in a saucepan until foamy. Add apples and sprinkle with sugar. Cook at high temperature for about 2-3 minutes until the sugar is slightly caramelised. Make sure that the apples do not disintegrate. Add the cognac and let the alcohol evaporate briefly. Remove the pot from the heat and set aside. Take the dough out of the fridge and roll it out between the cling film into two circles of about 30 cm diameter. Grease the pie form. Place one half of the dough in the mould and let the edge protrude a little. Using a skimmer, remove apples from the pot, drain a little and spread over the dough. Divide the remaining 10 g butter into small flakes and spread over the apples in the middle. Place the second half of the dough on the Apple Pie apple cake and cut the dough to the right size. If you like, you can use the cut dough to decorate the Apple Pie apple cake. As you can see in the picture above, press the edges together well and decorate with a fork. To allow the steam to draw off during baking, cut a cross or hole in the centre of the Apple Pie apple cake in the dough lid and cut a few light cuts into the edge of the cake. Preheat the oven to 175° and bake the Apple Pie apple cake on the middle shelf for about 60-70 minutes until golden brown.
