Schopska is a Bulgarian salad that is easy to prepare, but gets its special aroma from the long infusion in its own juice. This recipe comes from a Bulgarian woman. Put three slices of cucumber aside for decoration. Cut the remaining cucumber, tomatoes, onion and garlic into small cubes and mix. Season Schopska salad with salt only. Place slices of cucumber on the salad and leave to stand for 60 minutes until enough juice is formed. Arrange Schopska lettuce conically on plates. Crumble the feta and sprinkle over the schopska salad. Cut cucumber slices in half and twist like a spiral. Decorate the schopska with cucumber slices.
