Tortellini with wild garlic

Tortellini with wild garlic
Quantity Ingredient
450 g Pork fillet
White Pepper
1 tbsp Olive Oil
400 g Tortellini Noodles
50 g Wild garlic
200 g Sour cream
5 tbsp Broth

For tortellini with wild garlic, first prepare the pork fillet. Rinse pork fillet briefly under running water and dab dry with kitchen paper. Carefully remove any white tendons and skins. Season pork fillet with white pepper and salt. Heat a stainless steel frying pan. Add the olive oil and fry the pork tenderloin all around at high temperature. Reduce the temperature and fry the pork tenderloin covered for approx. 15 minutes on a medium heat. Turning every now and then. Prepare the tortellini according to the instructions on the packet. Fresh tortellini require only 2 minutes cooking time. Rinse the wild garlic under running water, toss dry and finely chop the tender stems for the sauce. Cut the wild garlic leaves into fine strips. Pour the sour cream into a saucepan and heat. Pour in the broth while stirring with a whisk. Add the stalks of wild garlic to the sauce and heat briefly. Season the sauce with white pepper and salt. Arrange tortellini with bear's garlic and sauce on preheated plates. Cut the pork fillet into slices and arrange next to the tortellini with wild garlic.
