Apple Crumble Gratin

150 g Wheat Flour Type 405
100 g Butter
3 Apple
2 tbsp Lemon juice
1 tsp Lemon peel
2 tbsp Sugar
50 g Planed hazelnuts
100 g Cream
0,5 Vanilla pod
2 tsp Vanilla Sugar
1 tsp Food starch
1 Egg Yellow

Apple crumble gratin can be served hot or cold. Preheat oven to 220°. Place the flour in a bowl and mix with 2 tablespoons of sugar. If possible, cut cold butter into small flakes and knead by hand with the flour into crumbles. Spread a casserole dish with butter. Peel and quarter the apples and remove the core. Cut apples into slices, sprinkle with freshly squeezed lemon juice and place in the baking dish. Finely grate the peel of a lemon and mix with 2 tablespoons of sugar. Sprinkle the apples with lemon sugar and the hazelnuts. Cover the apple gratin with sprinkles and bake in the preheated oven at 220° for approx. 25 minutes on the middle shelf until golden brown. For the vanilla sauce put cream in a pot. Halve the vanilla pod lengthwise, scrape out the vanilla pulp and add to the cream together with the vanilla pod. Add the vanilla sugar and bring the cream to the boil while stirring. Remove vanilla pod. Stir a level teaspoonful of starch with a little cold water until smooth and bind the cream with it. Remove the cream from the heat and allow to cool slightly. Stir the egg yolk into the vanilla sauce.
