Rice dish from Senegal

2 tbsp Sunflower Oil
200 g Tomatoes
150 g Courgette
150 g Eggplant
1 Green Paprika
1 Onions
0,125 l Water
Pepper & Salt
5 Spice Cloves
Cayenne Pepper
200 g Rice
0,25 l Broth

For this rice dish from Senegal, first cut the high rib into palm-sized slices. Heat oil in a stew pot. Brown the meat vigorously. Cut tomatoes, courgettes, aubergines, peppers and onions into small cubes. Add the vegetables and braise briefly. Deglaze with water. Season with pepper, salt, cloves and cayenne pepper. Put a lid on it. Stew at a low heat for 45 minutes. Put the rice in a saucepan. Fill with broth. Put on a lid and bring to the boil. Allow to swell at the lowest temperature for 20 minutes until a light crust forms on the bottom of the pot. If you want to serve the rice dish from Senegal traditionally, you can arrange rice, meat and vegetables on a large aluminum tray. The rice dish from Senegal is eaten with the fingers directly from the tray.
