Roast pork in pressure cooker

1000 g Pork roast
3 tsp Mustard
Pepper & Salt
Paprika powder
20 g Fat
1 Onions
100 g Soups Vegetables
Garlic
0,15 l Red wine
0,15 l Broth
3 tsp Starch Flour

Roasting pork in a pressure cooker takes only 30 minutes of stewing time. Rub pork roast all around with mustard. Season with pepper, salt and paprika powder. Heat the fat in the pressure cooker. Brown the roast pork well all around. Dice onion, soup vegetables and garlic. Remove meat from the pressure cooker briefly. Steam vegetables. Deglaze with red wine. Add broth. Place the roast pork on the vegetables. Close lid tightly. Adjust cooking level 2 on the lid. Set the cooker to the highest setting. As soon as the 2nd ring on the lid is visible, switch the cooker to medium setting. Stew meat for 30 minutes. Let off steam. Shake pressure cooker briefly. Let off the remaining steam. Do not remove the lid until the pressure in the pressure cooker has been released. Wrap pork roast in aluminium foil. Let it rest for a few minutes. Puree the sauce. Extend with water if necessary. Mix starch flour with a little cold water. Bring sauce to the boil briefly. Bind flour with starch.
