250 g Honey
2 tbsp Sugar
250 g Wheat Flour Type 405
0,125 tsp Salt
0,5 tsp Ground cinnamon
0,5 tsp Ground aniseed
0,25 tsp Ground cloves
0,25 tsp Ground nutmeg
50 g Candied orange peel
1 tsp Potash
1 tbsp Cold water
50 g Crumbs Candy Sugar
4 cl Sugar Syrup

For Aachener Printen Plätzchen, heat honey with sugar while stirring lightly until the sugar has dissolved. Take the pot off the stove. Season the flour with a pinch of salt, cinnamon, aniseed, cloves and nutmeg. Chop the candied orange peel very finely and mix in. Add the honey and knead into a firm dough. Let the dough of the Aachener Printen Plätzchen rest well closed for 2 days at room temperature. Preheat oven to 200° C. Dissolve the potash in cold water and knead vigorously under the dough until it becomes smooth. Roll out the dough to a square of 30 x 30 cm on a lightly floured work surface as thick as a finger. Sprinkle with rock candy and roll lightly over with the dough roll. Cut rectangles of 4 x 12 cm. Place Aachener Printen Plätzchen on a baking tray lined with baking paper and bake for 12 minutes on the middle shelf. Brush Aachener Printen Plätzchen still hot with sugar syrup. Let Aachener Printen Plätzchen rest in the tin for at least a week so that they become softer.
