Butter biscuits
Quantity Ingredient
250 g Wheat Flour Type 405
125 g Butter
125 g Powder Sugar
1 Eggs
0,5 Vanilla pod
1 tsp Lemon peel
1 Egg yolk
1 tbsp Cold water

For the butter biscuits put flour in a mixing bowl and spread cold butter over it in flakes. Add icing sugar and egg. Cut half a vanilla pod lengthwise, scrape out the pulp with a small spoon and pour into the bowl. Add a pinch of salt and grated lemon zest to an untreated lemon and knead until smooth. Form the dough into a ball, wrap in foil and place in the fridge for about 45 minutes. Roll out the dough to a thickness of approx. 1/2 cm on a lightly floured work surface. Cut out small figures or cookies and place them on a baking tray lined with baking paper. Preheat oven to 200° or circulating air 150-160°. Bake butter biscuits on the middle shelf for approx. 10 minutes until golden brown. Mix egg yolk with water and brush butter biscuits with it. Sprinkle butter biscuits with coloured sprinkles, chopped pistachios, chopped almonds, sugar or chocolate sprinkles.
