Alsatian Potato Casserole

Alsatian Potato Casserole

Alsatian potato casserole is prepared with new potatoes. Cut the potatoes into thin slices. Pour into a bowl. Cover with water. Wash thoroughly to loosen the starch. Drain and dry well. Heat the lard in a pan. Fry the potatoes at medium heat for 20 minutes, turning several times. Cut onion and garlic into fine cubes and mix in. Dice the bacon and fry for 10 minutes. Season with pepper, salt, thyme and rosemary. Pour the Alsatian potato casserole into a greased casserole dish. Cut the cheese into slices and spread over the Alsatian casserole. Set grill to level 3. Gratinate Alsatian potato casserole on the 2nd rail from above for 5 minutes. Serve a mixed salad with the Alsatian potato casserole.
