Antipasti mushrooms

Antipasti mushrooms

Antipasti mushrooms are easy to prepare. Quarter the mushrooms. Cut the garlic into thin slices. Remove the seeds from the chilli pod and cut into fine rings. Drain and chop the tomatoes. Heat the oil in a pan. Brown the mushrooms, garlic and chilli. Add the tomatoes. Sear briefly. Take the pan off the stove. Stir in wine and vinegar. Season with salt and pepper. Pour the antipasti mushrooms into a bowl. Cut the parsley into fine strips. Mix with the antipasti. Leave the antipasti to stand in the refrigerator for at least 2 hours.
