450 g Wheat Flour Type 405
1 tsp Salt
15 g Fresh yeast
0,25 l Water
1 tsp Sugar
1 tbsp Olive Oil

Ciabatta bread can be used in many ways. The dough of this ciabatta rises well and the bread becomes nice and light. Mix flour with salt. Dissolve fresh yeast with sugar in lukewarm water. Let it go for 10 minutes. Make a depression in the middle of the flour. Pour yeast and oil into the well and knead. The dough should come off the rim of the bowl easily. Cover the dough and leave to rise in a warm place for 20 minutes. Roll out to a rectangle of 30 x 40 cm on a slightly floured work surface. Turn the short sides slightly inwards. Roll the dough over the long side to form ciabatta bread. Press the seams firmly. Place bread on a baking tray covered with baking paper. Cover with a cloth. Let ciabatta go for 20 minutes. Preheat oven to 210° C. Bake bread on the 2nd rack from the bottom for 35 minutes. Let the ciabatta cool down on a grid before cutting it.
