300 g Ground almonds
0,5 tsp Ground cinnamon
1 tsp Lemon peel
4 cl Amaretto Liqueur

Amaretti biscuits are Italian almond biscuits which can be served with desserts such as tiramisu and ice cream, espresso, latte macchiato or amaretto. The large quantity of 150 pieces is due to the fact that the Amaretti biscuits are very small. Beat the egg whites with a pinch of salt until very stiff. Slowly add the sugar to the beaten egg white while stirring. Carefully stir the grated almonds, cinnamon and grated lemon slice of an untreated lemon into the beaten egg white. Stir in Amaretto and fill the dough into a piping bag without a syringe. The quantity is sufficient for approx. 3 baking trays of 50 Amaretti biscuits each. Line baking trays with baking paper. Spray a small amount of almond dough onto the baking tray with a little distance and cut it off with a knife. So you get Amaretti biscuits of the same size relatively quickly. Finally moisten your hands lightly with water and form the Amaretti into small balls. The Amaretti biscuits run a little apart during baking. Preheat oven to 180° and bake Amaretti on the middle shelf for about 20 minutes until light brown. Let the Amaretti biscuits cool on the tray. After cooling, the Amaretti biscuits become crispy and can be kept for a long time in cookie jars.
