Pork fillet with green asparagus

500 g Pork fillet

1 tsp Starch Flour
3 tbsp Soy sauce
2 tbsp Sake wine
500 g Green asparagus
1 tbsp Soy Oil
0,125 l Broth
0,5 Lemons

Pork fillet with green asparagus can be prepared in a wok or in a large heavy pan. First prepare wild rice according to the package instructions. Carefully skin the fillet of pork and cut into thin slices with a sharp knife. Stir the egg whites with the starch flour, soy sauce and sake or a dry sherry until slightly foamy. Turn pork fillet slices in the marinade and cover and leave to stand for a few minutes. Peel the lower third of the green asparagus and cut off the woody ends. Cut the green asparagus into bite-sized pieces. Cook the asparagus pieces in boiling salted water for about 4-5 minutes. Pour into a sieve and blanch in ice-cold water. Drain asparagus well. Heat soy oil in portions in a wok and sauté drained pork fillet slices in it for a few seconds. Put the meat on a deep plate and fry the next portion. Fry the green asparagus in the remaining soy oil for about 2 minutes while stirring. Add the pork fillet and the gravy and stir well. Add the hot broth and reduce the sauce to a small rest over a high heat. Season with freshly squeezed juice of half a lemon, freshly ground pepper and a pinch of cayenne pepper. Serve pork fillet with green asparagus and wild rice.
