Dibbelabbes Potato Pan

Dibbelabbes potato pan is a Saarland dish. Preheat baking oven to 200° C. Peel potatoes and onions, grate finely and mix with egg. Cut the leek into fine rings. Dice the bacon. Place an ovenproof pan on the stove. Heat the lard in it. Fry the bacon. Add the leeks and sauté briefly. Add the potatoes and mix in. Season potato pan with pepper, salt and nutmeg. Mix in chopped parsley and marjoram. Push Dibbelabbes together so that about half of the floor is covered. Put a lid on it. Push the pan on the 2nd rail from below. Cook for 70 minutes. Remove cover. Bake Dibbelabbes for 15 minutes until a crust forms. Serve Dibbelabbes with fresh salad or apple compote.
