Bear's garlic flat bread

30 g Wild garlic
50 g Gruyère cheese
200 g Wheat Flour Type 405
7 tbsp Olive Oil
5 tbsp Cold water
1 Eggs

The bear's garlic flat bread is baked in the pan. It can be prepared very well and tastes good as a side dish with grilled meats or as a snack with a glass of wine. If you cut the bear's garlic flat bread into pieces like a cake, you can also serve it as a starter with fresh salad. Cut the wild garlic into fine strips and place in a bowl. Finely grate the Gruyère and mix in. In another bowl knead flour, a pinch of salt, 5 tablespoons olive oil and water with your hands to a very firm dough. Divide the dough into two pieces and roll out into two thin flat cakes on a lightly floured work surface. Cover a bread with bear's garlic cheese mixture. Leave an edge of 1 cm free all around. Whisk an egg. Brush the edge of the bear's garlic flat bread with it. Place the second flat cake on the filling and press the edge together firmly. Heat 2 tablespoons of olive oil in a coated pan. Fry the bread on both sides until golden yellow and serve warm.
