Papas Chorridas

Papas Chorridas (potatoes with cheese sauce) is a dish from South America. If you want to serve Papas Chorridas as a main course, you should increase the amount of potatoes a little. The quantity is sufficient as a side dish. Cook as small potatoes as possible in their skins, peel and keep warm. Peel onion and cut into fine cubes. In a pot let out butter and fry onion cubes in it until glassy. Dust onions with flour, sauté briefly while stirring and deglaze with milk. Stir the sauce vigorously so that the flour does not lump. Let the sauce simmer at low temperature for about 5 minutes. Finely grate the middle-aged Gouda and let it melt in the sauce while stirring. Set to lowest temperature and stir in cream fraiche. Boil the tomatoes in boiling water, skin and cut into small cubes. Add the tomato cubes to the sauce. Season with freshly ground pepper, salt and chilli powder. Add the potatoes to the sauce and heat briefly. Sprinkle the papas chorridas with freshly chopped parsley before serving.
