Chicken Curry

Chicken curry is prepared in the wok. Chicken breast fillet in strips cut. Peel and slice the carrots. Bamboo sprouts and soy beans rinse and drain. Peel the mango and cut into cubes. Dice the peppers. Remove the seeds from the chilli pod and dice finely. Mix lime juice with sesame oil and cane sugar. Heat soy oil in a wok. Sauté the vegetables with the mango. Add plenty of curry powder, some salt and cashew kernels and braise briefly. Remove vegetables from the wok and keep warm. Brown the chicken vigorously in a wok. Add the chilli pepper and some curry and fry well. Mix the vegetables with the chicken curry. Mix in the lime sauce. Sprinkle chicken curry with grated lime peel.
