Yeast waffles are sprinkled with sugar after baking and served with fresh fruits of the season, such as blueberries and raspberries. Vanilla sauce or cream go very well with it. For the dough of the yeast waffles first stir soft butter until creamy and gradually stir in the eggs until they have combined with the butter. Stir the flour into the butter. Warm the milk lukewarm, dissolve the fresh yeast in it and stir into the waffle dough. Grate the lemon zest of an untreated organic lemon finely, stir into the waffle dough and cover and leave to rise for approx. 1 hour in a warm place. Preheat the waffle iron and lightly grease it before each baking. For the yeast waffles fill each 2 tablespoons of waffle dough into the waffle iron. Bake the yeast waffles light golden yellow, as shown in the picture above, and sprinkle with sugar immediately after baking. Serve yeast waffles with fresh blueberries and raspberries.
