Balkan lamb skewer

For Balkan lamb skewer first cut the meat into cubes. Pour into a bowl. Peel shallots and add bay leaves. For the marinade season oil with pepper, salt, freshly pressed garlic and finely chopped rosemary. Mix in the marinade. Preheat oven grill to level 3. Place lamb, shallots and bay leaves alternately on each Balkan skewer. Place the Balkan lamb skewers on a grill rack. Grill on the top rack for 3 to 4 minutes. Turn the Balkan Lamb skewers. Reduce the grill to level 2. Slide Balkan Lamb skewers onto the middle rack. Grill for a further 3 to 4 minutes.
