For Balkan lamb skewers one uses best lamb leg slices. The meat is particularly lean and tender. Cut the meat of the lamb leg slices into cubes. Peel shallots and alternate them with lamb, meat and bay leaves on a skewer. Season oil with freshly ground pepper, salt, freshly squeezed garlic and rosemary. Use a brush to apply the oil to the Balkan lamb skewers. Preheat grill to level 3. Place Balkan lamb skewers on a grill and grill on the top rail for 3 to 4 minutes. Balkan lamb skewers turn. Lower the grill to level 2 and slide the Balkan Lamb skewers onto the middle rail. Grill for another 3 to 4 minutes. Balkan lamb skewer you can also grill over the charcoal grill.
