Balkan Sauce

Balkan sauce tastes very good with roasted or grilled meat and poultry. For the Balkan sauce, first halve the paprika. Remove white skins and seeds. Place the peppers on a grill. Grill in the oven on the top rail for 10 minutes at level 3 until the skin throws black bubbles. Put the peppers in a freezer bag and seal. Place in cold water to cool more quickly. Remove skin. Puree paprika, oil, lemon juice, sambal oelek, pepper, salt and 1 garlic clove. Balkan sauce in a bowl filling. Cut 1 garlic clove into thin slices. Heat 1 teaspoon oil in a pan. Brown the garlic until light. Sprinkle garlic over the Balkan sauce.
