125 g Wheat Flour Type 405
2 tsp Back Powder
0,5 tsp Sodium bicarbonate
1 Eggs
0,3 l Milk
40 g Butter
60 g Margarine
9 tsp Maple Syrup

For Pancakes mix flour with baking powder and baking soda. Stir in egg and milk. Melt 20 g butter at low temperature. Allow to cool slightly, stir into the dough and season with a pinch of salt. Let the dough rest for a few minutes. Portionwise heat only a little margarine in a pan. Do not bake more than three small pancakes at the same time. Pancakes turn as soon as the surface solidifies. Keep finished pancakes warm at 50° C in the baking oven. The pancakes are traditionally served as a small stack on the plate with a piece of the remaining butter. Pour maple syrup over it.
