Taboule - Couscous Salad

Taboule - Couscous salad originally comes from Tunisia or Morocco. Taboule couscous salad is satiating, but is well suited as a side dish for grilling. Pour boiling broth over the couscous. Cover and allow to swell for 5 minutes until the liquid has been completely absorbed. Loosen the couscous with a fork. Add oil and lemon juice. Cut tomato, onion and peeled cucumber into small cubes. Stone and halve the olives. Mix all ingredients with the Taboule Couscous salad. Chop the parsley, cut the peppermint into fine strips and mix into the taboule salad. Season with salt and pepper. Taboule lettuce should not be left to steep too long so that it does not become too soft.
