Asparagus salad with salmon
Quantity Ingredient
500 g Asparagus
500 g Green asparagus
2 tbsp Herbs Vinegar
4 tbsp Oil
0,5 tsp Mustard
3 Shallots Onion
2 tbsp Dill
200 g Smoked Salmon
1 tsp Pink pepper grains

For asparagus salad with salmon stripes white asparagus peel. Cut off the ends. The green asparagus only needs to be peeled in the lower third. Cut off the ends as well. Cut the asparagus into pieces. Blanch water in boiling salt for 2 to 4 minutes. Pour into a sieve and quench with cold water. For the marinade of the salad mix vinegar, oil and mustard. Cut the shallots into fine cubes. Mix with the marinade. Finely chop the dill and add. Season with a little salt as the salmon is already spicy enough. Cut the salmon into strips and fold into the marinade with the asparagus. Arrange asparagus salad with salmon strips on plates. Sprinkle peppercorns over the salad.
