Wild garlic noodles

Cook noodles bite-resistant. In the meantime, wash the bear's garlic, dry well and remove the coarse stems. Peel a small shallot, dice finely and sauté in 1 tablespoon olive oil. Deglaze with 100 ml white wine. Add 120 ml meat stock, 50 ml milk and 50 g cream. Cook the sauce for 5 minutes without lid. Cut the wild garlic into fine strips and add to the sauce. Season with fresh garlic, freshly ground pepper, salt and lemon juice. Drain the cooked pasta and toss in 1 tablespoon of olive oil. Season the pasta with freshly ground pepper and mix well with the bear's garlic sauce. Serve ramson noodles as hot as possible.
