Styrian root meat

For Styrian root meat best use pig shoulder with rind. Put the meat in a pot and cover with water. Add salt, pepper grains, juniper berries, bay leaf, vinegar, thyme and marjoram. Put the lid on and bring to the boil. Put at medium temperature and cook Steirisches Wurzel meat for 60 minutes. Peel and slice the potatoes and add to the broth 20 minutes before the end of the cooking time. Cut the carrots, parsley root and leek into thin strips and add to the broth 7 minutes before the end of cooking. Remove the meat from the bones and rind, cut into slices and spread on plates. Cover with vegetables and sprinkle with cut leek. Horseradish will do.
