Salmon Tatar

Salmon Tatar can be prepared quickly and looks decorative on a buffet. Cut smoked salmon into fine cubes. Carve the tomatoes crosswise and blanch with boiling water. Peel the tomatoes, remove the seeds, cut into fine cubes and mix with the salmon cubes. Mix olive oil with the juice of half a lemon. Season with salt and pepper. Cut the chives into fine rolls and mix with the salmon tartare. Mix the marinade with the salmon tartare and leave to stand in the fridge for about 30 minutes. Wash and dry the cucumber well. Plane into fine slices with the bowl or cut very finely with the bread machine. Place cucumber slices in wreath form on a plate or a large plate. Mix a vinaigrette with olive oil, white wine vinegar, pepper and salt and sprinkle over the cucumber slices. Arrange the salmon tartar in the middle of the cucumber wreath.
