Pork fillet in parmesan wrapping

Cut the pork fillet into 1 cm wide slices. Beat flat with the flat side of the meat knocker and season with ground pepper, salt and chopped rosemary needles. Then turn in flour. For the Parmesan coating grate fresh Parmesan, whisk with eggs and pull the pork fillet through the Parmesan mass. Heat the oil and sauté the fillet of pork in a parmesan dish until hot. Preheat oven to 90° C. Let the pork fillet in parmesan wrapping rest in the oven for 15 minutes. Pork fillet in parmesan wrapping can be served hot or cold.
