Pork medallions with onion crust

400 g Onions
10 g Butter
1 tbsp White wine vinegar
150 g Sour cream
3 tbsp Mustard
Pepper & Salt
5 g Sugar
500 g Pork tenderloin
Paprika powder
150 g Ham bacon

For pork medallions with onion crust preheat the oven to 225 ° C. For the crust, first finely dice the onions. Sauté in butter until translucent. Add white wine vinegar. Simmer until the liquid evaporates. Stir in sour cream and mustard. Season with pepper, salt and a pinch of sugar. Leave to cool. Remove white skin and fat from pork tenderloin. Cut pork tenderloin into 2 cm thick medallions. Flatten slightly. Season with pepper, salt and paprika powder. Wrap pork medallions with bacon. Place in a lightly greased baking dish. For crust, pour onion mixture onto medallions and smooth. Bake pork medallions on middle rack for 30 minutes, until onion crust is lightly browned.
