Apple cake with almond slivers

1,2 kg Apple
5 tbsp Cold water
1 tsp Lemon juice
150 g Butter
200 g Sugar
1 tsp Ground Vanilla
0,25 tsp Lemon peel

3 Eggs
280 g Wheat Flour Type 405
1 tsp Back Powder
7 tbsp Milk
30 g Almond splinters
20 g Powder Sugar

The recipe for the apple cake with almond slivers is enough for half a baking tray. Peel apples, remove seeds and cut into slices. Bring apple slices, 5 tbsp. water and lemon juice to the boil briefly. Reduce the temperature and steam the apple slices for 3 minutes. Drain apple slices. For the cake, whisk butter, sugar, vanilla, finely grated lemon zest and a pinch of salt until foamy. Stir in the eggs little by little. Mix flour and baking powder and stir in with milk. Line half a tray with baking paper and place a greased frame on top. Fill in the dough and smooth down. Cover the cake with apple slices. Pour the almond slivers into a bowl and mix with slightly moistened hands. Add powder sugar, mix and sprinkle the apple cake with almond slivers. Preheat oven to 170° C. Bake apple cake with almond slivers on the middle rack for 55 to 60 minutes.
