Rinse a ripe peach and pat dry. Prick several times with a fork all around and put into a large glass. Fill with ice-cold sparkling wine. It is important that the sparkling wine is really ice-cold, otherwise the peach will not turn. The peach should be able to move freely in the glass. Serve immediately. The peach starts spinning on its own. It only rolls until the carbonic acid escapes from the sparkling wine. Best served with a spoon and fork, or add extra small dessert plates.
