West Samoa Potato Salad

This recipe comes from West Samoa and is served there at wedding parties, among other occasions. The West Samoa potato salad also goes well with fried chicken. Cook, cool and peel the potatoes. Cut into coarse cubes. Cut the garlic into fine cubes and sprinkle over them. Cut onions and spices into cucumbers and mix with potatoes. Add capers, soft boiled peas, and corn. Cut a green pepper into cubes. Add to the potato salad. Bring broth with white wine vinegar, pepper, salt and chili powder to the boil briefly, pour over salad and let cool. Cover the West Samoa potato salad only finely with mayonnaise. Let something go through. Boil the eggs hard, quarter them and decorate the salad with them.
