Calamari with garlic sauce

For calamari with garlic sauce, preheat deep fryer to 180° C. Fry calamares ink fish in two portions for 2 to 3 minutes. Drain on kitchen paper. Keep calamares warm in preheated oven at 50° C. Deep fry French fries potatoes in 2 portions at 180° C for 3 minutes. Drain and keep warm in the oven. For the garlic sauce, put herbs fresh cheese, thick milk and mayonnaise in a bowl. Stir lemon juice into mayonnaise. Chop onion very finely. Mix into the sauce. Season with pepper, salt, freshly squeezed garlic and finely chopped dill. Just before serving, heat calamari and fries again briefly in deep fryer. Serve with garlic sauce.
