Asparagus with salmon
Quantity Ingredient
1 kg Asparagus
10 g Sugar
30 g Butter
500 g Potatoes
0,25 l Milk
2 tbsp Cream
5 tsp Sauces Binder
0,125 l White Wine
Pepper & Salt
2 tbsp Dill
400 g Salmon
1 tsp Lemon juice

Asparagus with salmon is served in a dill sauce. Peel the asparagus and cut off the woody ends. Bring the water to the boil with a pinch of salt, sugar and 10 g butter. Cook asparagus in 15 minutes on medium heat until soft. Pell potatoes boil. For the dill sauce, bring milk and cream to the boil while stirring. Stir in light sauces binder and set the temperature to the lowest level. Add the wine and season with salt and pepper. Finely chop the dill and add to the sauce. Rinse and dry salmon. Heat the remaining butter in a pan at medium temperature. Sprinkle salmon with lemon juice and fry briefly on both sides. Set the temperature to the lowest level and let the salmon cook for 4 to 5 minutes. Season salmon with salt and pepper. Peel the potatoes. Arrange asparagus with salmon, potatoes and dill sauce on preheated plates.
