For roasted almonds in a pan bring about 1/8 liters of water with sugar, vanilla sugar and cinnamon to the boil. Add the unpeeled almonds and cook at high temperature until the sugar is dry. Stir constantly with a wooden spoon. Heat to medium temperature and stir the almonds until the sugar melts again and caramelise the roasted almonds. Pour the roasted almonds on baking paper and cut them up immediately with the help of 2 forks. Baked almonds taste best still warm.
