125 g Margarine
125 g Sugar
1 packet Vanilla Sugar
6 Egg yolk
250 g Wheat Flour Type 405
1 tsp Back Powder
0,25 l Milk
6 Albumen
0,5 tbsp Lemon peel

These classic waffles are easy to prepare. Warm the milk slightly. Cream margarine with vanilla sugar. Alternately stir in sugar and egg yolk. Mix flour with baking powder and stir alternately with milk into the margarine until a thick waffle dough is formed. Beat the egg whites until stiff and fold into the waffle dough. Season with finely grated lemon peel. Let the waffle dough swell for at least 30 minutes. Dilute the waffle dough with some milk if necessary. Preheat the waffle iron and grease with a little margarine. Fill in just under 2 tablespoons of waffle dough. Close the waffle iron and bake the waffles until light brown. If you let the waffles cool on a cake grid, they stay crispy. If you stack them on top of each other, they get soft. The waffles taste best fresh. Remnants of the waffles can be baked the next day in the toaster.
