3 plates Leaves dough
300 g Apple compote
1 Egg yolk
20 g Powder Sugar
2 tsp Lemon juice

Apple bags are slightly crispy and taste best oven warm. Apple bags are especially tasty if you prepare them with homemade apple compote. Preheat the oven to 200° and line a baking tray with baking paper. Place 3 rectangular plates of puff pastry next to each other on a lightly floured work surface and defrost in approx. 10 minutes. Cut the puff pastry in the middle so that you get 6 squares. Roll out each square to double its length. Fill the apple compote to one half of the puff pastry and place the released dough on top. Press the edges of the dough together and press in a pattern with a fork, as shown in the picture above. Whisk an egg yolk and brush onto the apple pockets with a baking brush. Place the apple pockets on the baking tray and bake on the middle shelf for approx. 20 minutes at 200°. For the icing, pass the icing sugar through a fine tea strainer into a bowl and stir until creamy with freshly squeezed lemon juice. Spread the icing on the warm apple pockets. Cream, vanilla ice cream or vanilla sauce go very well with the apple bags.
