Chicory au gratin

125 g Rice
350 g Chicory Salad
200 g Cooked ham
20 g Margarine
20 g Wheat Flour Type 405
0,25 l Milk
3 tbsp Cream
0,5 tsp Lemon juice
Pepper & Salt
0,5 tsp Instant broth
50 g Edam cheese

Chicory gratinated is prepared with a cheese sauce. Boil the rice. Preheat baking oven to 225° C. Rinse and dry the chicory. Cut off the tips of the bitter leaves. Cut out the stem in a wedge shape. Blanch the chicory in boiling salt water for 1 minute. Rinse with cold water and drain. Wrap the chicory in ham and place in a baking dish to gratinate. For the sauce skip margarine. Stir in the flour. Deglaze with milk. Add the cream. Season with pepper, salt, broth and lemon juice. Melt 30 g grated cheese in the sauce. Pour the sauce over the chicory. Sprinkle 20 g cheese on top for gratinating. Bake for 25 minutes on the middle rack.
