Sis Kebap

Sis Kebap is a Turkish lamb skewer from the grill. To make the lamb meat particularly tender, it should be soaked the day before. Cut lamb meat into large cubes, as shown in the picture above, and fill into a bowl. Peel an onion and grate finely with the fine side of a square grater. Crush the garlic together with half a teaspoon salt, add the onions and the meat to the lamb and add the olive oil. Finely chop about half a tablespoon of peppermint leaves and add to the lamb meat with a little milk. Carefully knead the marinade with the lamb meat, cover, put in the fridge and marinate overnight. Cut the peppers into large cubes. Quarter tomatoes and alternate them with lamb, meat and paprika on skewers. Season Sis Kebap with pepper and salt and grill on the grill or under the electric grill on the top rail, level 3 about 10 minutes. Turn sis kebap and grill for another 8 minutes. Sis Kebap is served with a kind of tzatziki or yoghurt sauce. Stir yoghurt with lemon juice until smooth. Finely chop the parsley and dill, stir into the yoghurt and season with salt and cumin. Grate the cucumber finely, squeeze and mix with the yoghurt. Sis Kebap tastes particularly good with homemade flat bread (see recipe).
