Plum cake

400 g Wheat Flour Type 405
2 tsp Back Powder
150 g Sugar
16 g Vanilla Sugar
2 Eggs
3 tbsp Milk
200 g Margarine
1,5 kg Plums
2 tbsp Breadcrumbs flour
Ground cinnamon

This plum cake tastes particularly juicy. Preheat oven to 220° C. Mix flour, baking powder, a pinch of salt, sugar and vanilla sugar. Knead in eggs, milk and margarine. Carve the plums lengthwise. Remove stone. For the plum cake, grease a half baking tray of 32 x 24 cm. Sprinkle with breadcrumbs of flour. Place the dough on top. Smooth it with a moistened spatula. Cover the cake as thickly as possible with plums. The open side of the plums should face upwards. Bake the cake on the 2nd rack from the bottom for 40 minutes. Remove the cake from the oven. Immediately sprinkle with some sugar and cinnamon.
