Vegetables

Vegetables are best bought fresh and processed immediately, as vitamins are lost during prolonged storage. Since vegetables can often only be bought fresh seasonally, one can of course also fall back on frozen goods. Pickled vegetables such as cucumbers and olives can be kept well in stock. Dried tomatoes, aubergines or courgettes give vegetable dishes an intense aroma and can also be kept in stock.
