Wild rice

Wild rice (engl. wild rice, franz. riz sauvage, ital. riso selvaggio, span. arroz silvestre) is actually not rice but the fruit of a water grass growing in North America and Canada. If one buys organic rice in health food shops or health food shops, then this is mostly still from wildly growing stocks. Freshly harvested wild rice is green and must be preserved by kilning (dehydration similar to drying). Wild rice should always be well washed before use until the water remains clear.
