When using white wine for recipes, it is advisable to use white wine, which you also like to drink, as the quality of the sauce or dessert depends on the quality of the wine used. Usually you only need a small amount of white wine anyway and should not necessarily save there. Of course, it depends on your personal taste whether you prefer a sweet, fruity or dry white wine. However, one should keep in mind that hearty sauces hardly taste good with a sweet wine, while it is suitable for a dessert again. A good alternative is to use a semi-dry, slightly fruity white wine. It is important that no more than 1/8 litre of white wine is used for recipes with white wine, as the alcohol does not evaporate completely when cooking larger quantities. For diluting sauces you should therefore use broth or water.
