White Pepper

White pepper is obtained from the fruit of the pepper plant. White pepper comes from the same plant as black, red or green pepper. The colour is determined by the time of harvest. To harvest white pepper, the fruit of the pepper plant must be fully ripe. White pepper does not smell and taste as aromatic as black pepper, but it gives dishes more spiciness, which is why it is used more sparingly. Since the aroma fades quickly, white pepper is best kept well sealed in a dark place.
