Thick rib

Thick rib is cut from the breast or breast tip of the pig and sold in pieces or cut up with ribs, sometimes also with rind. The fat content of this well grown meat is about 20 percent. To make the coarse-fibred meat more tender, marinate the thick rib before roasting or grilling. Thick rib is also used for cooking soups and stews, as it gives the dishes a hearty taste.
